Ingredients 1 medium to large cauliflower Marinade 4 tablespoon yogurt and oil 1tablespoon 3tablespoon Tandoori masala powder 1 tablespoon lemon juice 2 garlic cloves, chopped finely 1/4 teaspoon turmeric salt as per your taste Home made Tandoori powder ————————————————— Ingredients 2 tsp Ginger powder2 tsp Garlic powder1 tsp Kashmiri chilly powder1 tsp Kasoori methi 1 stick of Cinnamon stick2 Cloves3 tbspCumin seeds2 tbsp Coriander seeds2 tbsp Black peppercorns2 tbsp Black cardamom2 teaspoons Green CardamomSalt to Taste. Preparation: Heat a heavy-bottomed pan on a low flame. Add the whole spices Cinnamon sticks, Cloves, Mace, Cumin seeds, Coriander seeds, Black peppercorns, Black cardamom, ( big elachi) and Green Cardamom. Dry roast them on a low flame for 3 minutes. Keep stirring and as they start their aroma, turn off the fire. Add all the powdered spices like dry ginger powder, Garlic powder, Red food color( Kashmiri chilly )and add fenugreek leaves to the pan. Mix it well. Set it aside. Once its cool. Then grind the spices to its powdered form. Sieve the blended through a strainer. Store in an airtight container and good for 6 months. Your homemade tandoori masala is ready to use. Preparation Preheat the oven to 400 F Take a large bowl to Mix all marinade ingredients together and set aside. If it’s too thick add 2 tablespoon water. Make sure to trim the cauliflower leaves. Also trim and discard the stalk so the cauliflower can sit flat in your baking tray an oven save pot for baking. Turn your cauliflower upside down and pour the marinade down the center into the gaps and then flip the cauliflower over and massage it with the remaining marinade. Sprinkle with salt . place the cauliflower in your oven pot core-side down. Cover your pot/ baking tray with a lid and pop it in the oven for 40 to 40 minutes (check your oven settings may be different 30 minutes . After 30 minutes Remove the pot / baking tray from the oven. Serve with your choice of protein and Rice
