Tricia's Creations: Capirotada Mexican Bread Pudding: lazy version
Capirotada (Mexican Bread Puddin) Lazy Version Ingredients: white bread such as bolillos approx 7 pieces 2 piloncillos or brown sugar approx 1 1/2 cups cinnamon sticks approx 6 sticks raisins (apple or bananas..sliced) 1 stick butter Mexican cheese (your choice), mozarella or yellow cheddar type cheese peanut butter optional peanuts optional Instructions: First let's make a tea. In a large pot bring to boil up to 6 cups water. Break cinnamon sticks and add to water. Add enough to make a strong tea. Break up the piloncillo (i used 2 cones) or add about 1 1/2 cups brown sugar and stir in to dissolve. Add raisins to tea to plump them up or add some apple slices just to make them slight tender (don't let them get mushy). When tea is done.. remove cinnamon sticks and raisins or apples and set aside. To the hot tea add stick of butter to melt, set aside. Slice up the bread rolls and place on a baking sheet and toast in 350 degree farenheit oven about 5 to 7 minutes. You can opt out and use sliced white bread or a large loaf of french bread. If you opt out of peanut butter then use the stick of butter to spread on them instead of melting it in tea.. your choice. I spread my toasted slices of the bolillo rolls with crunchy peanut butter. I wanted to add peanuts if I had grabbed some. If i had, I would boil them as well in the tea.. remove and set aside. Now place the peanut buttered or buttered bread pieces in a baking dish.. covering bottom with a layer. Start to build layer by adding your fruit, in my case raisins and peanuts if you boiled them as well. Otherwise you may have chosen apples that you slightly boiled or slice up some banana and layer that. Layer some cheese and then pour about 2 cups of the tea on this. Repeat layering and add tea till all is used. Place in oven already heated at 350 and bake for approx 20 minutes. Watch that cheese is melted, the top is toasty and it is bubbling. This is ready to serve hot or refrigerate, it tastes great cold too.
