Cheesecake | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

Healthy Cheese cake made with cottage cheese and yogurt, topped with mixed fruits. CHEESECAKE Ingredients 2 tablespoons rolled oats ¼ cup digestive biscuit crumbs 2 tablespoons melted butter 1 teaspoon + 2 tablespoons honey 1 tablespoon almond slivers 1 tablespoon chopped walnuts ½ cup grated cottage cheese ½ cup hung yogurt 1 teaspoon vanilla essence 1 cup whipped cream Zest of 1 lemon 1 medium kiwi, peeled and finely chopped 4-6 red grapes, finely chopped ¼ medium pineapple, peeled and cut into small pieces 3-4 orange segments A fresh mint sprig for garnishing Method 1. Toast oats in a non-stick pan till light golden and transfer in a bowl. 2. Add biscuit crumbs, melted butter, 1 teaspoon honey, almond slivers and walnuts to toasted oats and mix well. 3. Line a spring bottom cheesecake tin with oats-biscuit mixture and press to level it out. Refrigerate for 30 minutes or till set. 4. Grind together cottage cheese, hung yogurt, 2 tablespoons honey and vanilla essence to make a smooth mixture. Transfer in another bowl. 5. Add whipped cream and fold well. Add lemon zest and mix well. 6. Pour the cottage cheese mixture on top of lined tin filling ¾th of it and lightly tap. Refrigerate for 3-4 hours or till set. 7. Mix together kiwi, grapes and pineapple in another bowl. Refrigerate. 8. Spread the fruit mixture on top of set cheesecake and level it out. 9. Demould, place orange segments on top and serve immediately garnished with a mint sprig.
