Ingredients: 180g/1 cup diced fresh tomatoes 130 g/1 cup diced cucumbers (peeled or not) 70 g/1 cup chopped green onions 30 g/1/2 cup minced fresh parsley 100 g/1 cup chopped celery 175 g/1 cup chopped yellow bell pepper 60g/1/2 cup sliced black olives 45 ml/3 T olive oil 15 ml/1 T lemon juice Salt and pepper to taste Directions: Place first seven ingredients together in a medium salad bowl.
