Keto truffles
INSTRUCTIONS 30z choc 1 tbs coconut oil 1/4 cup heavy cream 1/4 cup stevia / optional 1 tbs vanilla extract Coating - coconut , nuts, cacao - Coarsely chop the chocolate - you can simply place all the ingredients (except for the toppings) in a small saucepan and cook over VERY low heat - the lowest possible, stirring often, until the chocolate is melted. - Remove from heat and stir until smooth. Use a rubber spatula to transfer to a shallow dish. Cover the mixture with a plastic wrap and freeze for 30 minutes. Now comes the fun (messy!) part, so you might want to use disposable gloves: Scoop out small portions of the mixture, measuring about 1 tablespoon per truffle. Shape the truffles with your hands into balls. They won’t be perfectly round. Roll the truffles in the toppings to coat. Now gently shape them again – it will be easier to shape them now. If you’d like, roll again in the toppings.
