Healthy Vegan - Carrots, peas & potatoes - Spice up your traditional sides with Indian seasonings; in only 20 minutes! If you happen to have paneer pieces, lightly toast them (or as is) and toss them in towards the end. Your kids will love eating paneer & start appreciating vegetables!!! A balanced vegetarian meal with intake of protein, calcium, fiber, vitamins & minerals. CARROTS, PEAS & POTATOES: https://youtu.be/DZVzTSVIF1w www.passthemasala.com You will need: A Non- stick pan, spatula, 2 bowls, peeler 5 large carrots 2 large potatoes 1 cup frozen peas Thumb size ginger, peeled and chopped 3 Tbsp. oil ½ tsp. red chili powder 1½ tsp. cumin seeds 2 tsp. coriander powder 1 tsp. turmeric powder 1½ tsp. salt Garnish with cilantro Method Wash carrots and potatoes and set aside. Peel the ginger and the potatoes. Chop ginger coarsely and set aside. Dice potatoes into small cubes, place them in a bowl with sufficient water so they don’t get brown. Peel carrots, cut into small pieces. Heat oil over medium heat, add red chili powder, ginger, cumin seeds, coriander powder, turmeric powder and salt, mix well. Add the carrots, cover and cook over medium heat for about 3 min. Remove cover, mix to ensure carrots do not burn. Cover and cook for another 5 min. Remove cover, mix in the potatoes, cover and cook for another 10 min. or until carrots and potatoes have softened. Periodically check to make sure vegetable are not touching the bottom, add little water if needed. Add the peas towards the end to retain the vibrant green color. Cover and cook for about 2 min. Remove from heat and garnish with chopped cilantro. This colorful dish takes no more than 20 min. to cook. Not only will it spice up your sides but it will get everyone to finish their vegetables.
