Lebanon PA, 7.10.2020: Welcome to Jo Ellen's Kitchen. PA Dutch homemade sauerkraut takes three weeks, will last up to two years, and does not need refrigerated. Does anyone have any of the old ceramic crocks in which they used to make the kraut? Ingredients: --3 tablespoons salt --1 head of cabbage --5" of water in the bottom of a food-grade container with a lid Cut a deep hole around the stem of the cabbage. Pour salt into the hole. Immerse cabbage, hole side up, into an opaque container filled with 5" deep of water. Place a plate over the cabbage, but inside the rim of the bucket. Weight it down with three canning jars filled with water. Cover, and place out of direct sunlight for three weeks. Check weekly, and skim off an mold or cloudy water. The brine will preserve the cabbage without refrigeration. Hint: Isle 6 at Lowes in Lebanon has food-grade buckets and lids. It's about a $6 investment.
