William Spinazze of Tenuta Santome- How are Brut and Extra Dry Proseccos produced?

Tenuta Santomè produces the world's only "Solar Powered Prosecco": one of the finest examples of Extra Dry Prosecco made today using only the traditional Glera grape and kept cold from harvest to final bottling with energy from the sun captured by 888 solar panels on their winery roof. Also produced are a Brut that is fermented a few days longer for more of a yeasty, drier flavors, and the single vineyard Prosecco Valdobiaddene Connegeliano, DOCG. The family's diverse soil types as well as natural curiosity has lead them to bottle still wines as well, including Chardonnay and Cabernet Sauvignon, alongside the indigenous Raboso, a full bodied, layered red.
