How to Enjoy Comfort | Butternut Squash Soup
Ingredients Butternut Squash: Preheat oven to 480°F (248°C). Cut Butternut Squash in half and and scoop out the middle (seeds). pour 1 tablespoon of Olive oil to both slices. Season to taste: add Oregano, Thyme, Turmeric, Rosemary, Red Pepper, Black Pepper, Nutmeg. Slice in half 8 cloves of garlic. and flip you butternut squash face down and put your garlic under it. Place your Butternut Squash in oven for 40 to 45 minutes. Pan: set pan temperature to 320°F (160°C) 2 tablespoons of Vegan Butter, let melt and add your 1 diced onion, to taste Black Pepper, Thyme, Garlic salt, add 4 cloves of garlic and mix well. leave uncovered and let simmer. leave for about 5 minutes to brown on all sides. Butternut Squash: Let cool and scoop out the butternut Squash and place it in your blender. Add your seasoned onions, add 1 cup of veggie broth and mix well. Add 1 can of coconut milk and salt mix again and... ENJOY!!!!
