When life gives you lemons, make a big batch of lemon cupcakes!! These are my favorite lemon cupcakes. They are moist, tender, have the perfect balance between sweetness and tanginess, and are bursting with lemon flavor. now lemon cupcakes are one of my favorite desserts. Lemon has actually become one of my favorite flavors, and I think it can do miracles to a plain cake. Plus, in cupcakes especially, it helps to cut down on the sweetness quite a bit, so if you’re not a fan of classic sweet buttercream, you might still love these cupcakes. You just have to! 5/3 cup cake flour 213g 1 cup granulated sugar 200g 2 lemon zest zest 1/4 tsp baking soda 3/2 tsp baking powder 1/4 tsp salt 3/4 cup unsalted butter(vegetable oil) 170g, melted 2 eggs room temperature 1/2 cup yogurt(sour cream)120mL, room temperature 1/4 cup lemon juice 60mL Method STEP 1 In a medium bowl add the eggs, sour cream(yogurt), melted butter (vegetalble oil), milk, sugar(mix with lemon zest) and lemon juice then whisk together and set aside. STEP 2 Sift the flour, salt, baking soda, and baking powder together in a large bowl then whisk together. STEP 3 Pour the dry mixture into the wet then mix until just combined STEP 4 Add cupcake papers to your muffin tin and fill about 3/4 the way up.
